Ingredients
2 tablespoons vegetable oil
1 onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons Massaman curry paste
1 cup potatoes, diced
1 cup carrots, sliced
1 cup bell peppers, diced
1 cup pineapple chunks
1 can (14 oz) coconut milk
2 cups vegetable broth
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon lime juice
Salt, to taste
Fresh cilantro, for garnish

Instructions
Heat the vegetable oil in a large pot over medium heat. Add the diced onion and cook until translucent.
Add the minced garlic and grated ginger to the pot. Cook for an additional minute until fragrant.
Stir in the Massaman curry paste and cook for another minute to release the flavors.
Add the diced potatoes, sliced carrots, and diced bell peppers to the pot. Stir to coat the vegetables with the curry paste.
Pour in the coconut milk and vegetable broth. Bring the mixture to a boil, then reduce the heat to simmer for about 20 minutes until the vegetables are tender.
Add the pineapple chunks, soy sauce, brown sugar, and lime juice to the pot. Stir well and let it simmer for another 5 minutes to combine the flavors.
Taste the curry and season with salt if needed.
Serve the Tropical Paradise Massaman Curry over steamed rice and garnish with fresh cilantro.
Storage
This curry can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave before serving.
Chef Notes
Massaman curry paste can be found in most Asian grocery stores or online. If unavailable, you can make your own by combining red chili, lemongrass, garlic, shallots, galangal, coriander seeds, cumin seeds, cardamom, and cloves in a blender.
For an extra kick of flavor, consider adding a spoonful of homemade sofrito (a traditional Caribbean seasoning blend of onion, garlic, bell peppers, and herbs) to the curry paste mixture.
Adjust the spice level of the curry by adding more or less curry paste, according to your preference.
