Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 cup firm tofu, crumbled

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • 4 large tortillas (whole wheat or gluten-free)

  • 1 avocado, sliced

  • Salsa or hot sauce, for serving

  • Fresh cilantro, for garnish (optional)

  • Skillet or frying pan

  • Mixing bowl

  • Spatula

  • Cutting board

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

  2. Add crumbled tofu to the skillet, along with turmeric, cumin, paprika, salt, and pepper. Stir well to combine and cook for another 5 minutes, allowing the flavors to meld together.

  3. Warm the tortillas in a separate skillet or microwave until pliable.

  4. Divide the tofu mixture evenly among the tortillas, placing it in a line along the center of each tortilla. Top with sliced avocado.

  5. Fold the sides of the tortillas inward, then roll them up tightly to form a burrito.

  6. Place the burritos seam-side down in the skillet and cook for a few minutes on each side until lightly browned and crispy.

  7. Remove from heat and serve the vegan fiesta breakfast burritos with salsa or hot sauce on the side. Garnish with fresh cilantro, if desired.
