Ingredients
8 ounces spaghetti (or pasta of choice)
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 medium carrot, finely grated
1 medium zucchini, finely grated
1 cup textured vegetable protein (TVP) or crumbled tofu
1 can (14 ounces) crushed tomatoes
2 tablespoons tomato paste
1 tablespoon soy sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon sugar
Salt and pepper to taste
Fresh basil leaves for garnish (optional)

Instructions
Cook the spaghetti according to package instructions. Drain and set aside.
Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.
Add the grated carrot and zucchini to the pot. Cook for another 2-3 minutes until the vegetables are slightly softened.
In a separate skillet, heat a little oil and sauté the textured vegetable protein (TVP) or crumbled tofu until lightly browned.
Transfer the cooked TVP or tofu to the pot with the vegetables. Stir in the crushed tomatoes, tomato paste, soy sauce, dried basil, dried oregano, sugar, salt, and pepper. Mix well.
Reduce the heat to low and simmer the sauce for 15 minutes, stirring occasionally.
Serve the Vegan Spaghetti Bolognese Fun-Zetti over the cooked spaghetti. Garnish with fresh basil leaves, if desired.
