Vegan Baked Eggplant

Ingredients:

  • 2 large eggplants, thinly sliced

  • 1 cup breadcrumbs (ensure they are vegan)

  • 1/2 cup nutritional yeast

  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water)

  • 2 cups homemade vegan marinara sauce

  • 1 cup vegan shredded mozzarella cheese

  • Salt and pepper to taste

  • Fresh basil leaves for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Eggplants: a. Slice the eggplants into thin rounds. b. Sprinkle salt on both sides of the eggplant slices and let them sit for about 15 minutes to draw out excess moisture.

  3. Prepare the Flax Eggs: Mix 2 tablespoons of ground flaxseed with 6 tablespoons of water. Let it sit for a few minutes until it thickens.

  4. Breading the Eggplants: a. Pat the eggplant slices dry with a paper towel. b. In one bowl, place the breadcrumbs mixed with nutritional yeast. In another bowl, place the flax eggs. c. Dip each eggplant slice into the flax eggs and then coat it with the breadcrumb mixture, ensuring an even coating.

  5. Bake the Eggplants: a. Arrange the breaded eggplant slices on a baking sheet lined with parchment paper. b. Bake for 25-30 minutes or until the eggplants are golden brown and crispy.

  6. Layering with Vegan Cheese and Sauce: a. In a baking dish, spread a thin layer of vegan marinara sauce. b. Place a layer of baked eggplant slices on top. c. Sprinkle vegan mozzarella cheese over the eggplant. d. Repeat the layers until all ingredients are used, finishing with a generous layer of cheese on top.

  7. Final Bake: a. Bake in the oven for an additional 15-20 minutes or until the vegan cheese is melted and bubbly.

  8. Serve: a. Let it cool for a few minutes before serving. b. Garnish with fresh basil leaves.

Storage: Store any leftovers in an airtight container in the refrigerator.
