Vegan (Oil-Free) Mayo
Cook Time: 10 minutes
Ingredients

8 oz Tofu Or Half block (Silken, firm, extra firm)

¼ tsp. of Garlic powder (1 clove)

2 1/2 tsp. Yellow Mustard

1/2 lemon squeezed

Pinch of Salt
-
¼ tsp. Curry Spice (Optional)

Pinch of Turmeric (Optional)
Instructions

Blend Tofu in a small food processor or Hand Blender in a Jar until a paste texture is formed.

Add all other ingredients and blend thoroughly until a mayonnaise texture is achieved.
Storage
Store in the fridge in an airtight lid and jar for up to 2 weeks.

The Softer the tofu (silken) the creamier the Mayo will be

Add a tsp, of Hot sauce, Siracha sauce, or Harissa paste to make a spicy mayo.

Add roasted garlic for added flavor.
